Source & Supply

Good food starts with good ingredients! We use only fresh & local: olives & olive oil from Pacific Sun Gourmet; antioxidant, vitamin rich, & heart healthy brown rice bran oil from California Rice Oil Company; sea salt, grains, & flours from Guisto’s Mills; fresh daily breads from Bordenaves; all of our unique condiments (except mayo) are all Made In House and are sugar & chemical free; fresh raw (non irradiated) nuts & dry fruits from Local Markets; seasonal, & organic fruits & vegetables come to us from various farms via Josh at Cecelia's Gardens (the fruit stand man at Tam Junction:);  humane and hormone free cheeses from Petaluma Creamery; and finally - we roast all our own humane & hormone free Turkey, Pork, & Beef fresh daily!!!  It's a lot of work  and it's worth it.

We've been hearing buzz that it's, "all organic."  That is not true. It is true that we use only very "thoughtfully sourced ingredients with respect to the health of the self, the environment, and the economy."  That, you can repeat!

 

As for vegetables, we stay away from the dirty dozen (the ones most likely to be leaden with pesticides and such).  Our Spinach, berries, lettuce, peppers, potatos, for example will always be organic.  But we are not so concerned about avocado, mango, and pineapple, or other fruits and veg which don’t require chemical inputs for a good harvest in the first place.  Our sprouts are locally grown by people who we know, trust, like, and who test twice a week.  So, you can totally trust us not to poison you!

Captain Chef Dr. Davey Jones & crew commandeered the limited deli space inside the New Bait Shop Market on Memorial Day 2010.  And we sail this old ship very hard, indeed, yaar.

A.J. (owner of the New Bait Shop Market & Deli) and D.J. (seafaring restaurateur) operate contract & plan free on trust ad belief in an emering and socially responsible entrepreneurship.

The captain & crew have traversed many a seas and brought back spices from the Caribbean, slow roasting techniques from Africa and meatloaf prowess from the Great Lakes. 

Our sandwiches are creative concoctions with the likes of mango-chipotle coleslaw with pulled pork, roasted root vegetables with hummus and cranberry compote, and spicy bahn mi style sandwiches made with slow roasted beef and fennel pickle--to name a few. 

Vegans and meat-o-philes equally welcome.  Try the Vegan Wrap.  It is phenomenally good low glycemic protein kick for real sustained energy and good for you!

Some ask how we came up with these ideas.  Our menu is not a vision as much as it is a method of balancing what we believe in with a respect to demographics and to what our tiny and limited space can produce.  To call it a kitchen would require a stretch of the imagination--we have no back of the house facilities save what you see and we produce everything with only one electric convection oven and steam heat--no fire, no grease, no sautee, no frying eggs, falafel, french fries.  Just so you know.  Imagine an artist with one brush, we are cooks with no sautee pans.
